If you’ve ever had a Banoffee Pie, you’ll understand the heavenly bite that is the buttery biscuit crust, a layer of decadent toffee, bananas, and whipped cream.
Paired with a cup of coffee or tea and it really can’t be beat!
For the dogs, I made a crust out of oat flour and seeds, and a “caramel” from squash, carob and chia seeds. The chia seeds will thicken and turn this layer into a gel. It looks as good as the real thing and is full of fiber and nutrients for your pup.
I whipped the yogurt with a hand mixer before piping, but you don’t really need to do this. I found it doesn’t make too much of a difference if you’re already using a nice thick, greek yogurt.
Ingredients
Crust
2/3 cup oat flour
1/4 cup raw mixed seeds, or any seeds you prefer (we used sesame, sunflower, chia, flaxseed, pumpkin)
1 tablespoon olive or coconut oil
Water as needed
“Caramel”
1 cup cooked squash, pumpkin, or sweet potato
1 teaspoon carob powder
1 heaping tablespoon chia seeds
Topping
1 large banana, sliced
Strained greek yogurt (the extra thick stuff)
Carob powder
Directions
Crust
Preheat oven to 325°F
Lightly crush seeds in a food processor or with the end of a rolling pin.
In a bowl, combine oat flour, crushed seeds and oil.
Add in water one tablespoon at a time, until you have a workable dough.
Roll dough out (ideally between two pieces of parchment paper) and transfer to your pie dish.
Bake for 30 minutes.
“Caramel”
In your food processor or blender, add the heaping tablespoon chia seeds. Blend it alone first until it’s a fine powder. Then add the cooked squash and carob powder. Blend until you have a smooth paste. You may need to add several splashes of water to get it to cooperate. It’s ok if it’s a little runny here as the chia seeds will help it thicken.
Assemble
In your cooled crust, spoon in the “caramel” layer.
Layer the banana pieces on top. Optionally refrigerate for 1 hour to set the caramel layer, especially if yours is more on the liquid side at this point.
Pipe or spoon on the yogurt.
Dust with carob powder.
Slice and serve with a Pupachino! :)
Keep refrigerated and feed within 3 days, or portion and store it in the freezer!
