Japanese Chicken Curry
This one is so good, I had a bowl of it...
Ingredients
2 skinless, boneless chicken thighs
1 carrot
1 small white sweet potato
2 oysters
1 tsp unsalted butter (or coconut oil)
1 cup plain chicken broth (or water)
1 tsp grated ginger
2 tablespoons grated apple (optional)
Optional side: wild rice, white rice, or quinoa
“Curry” slurry:
1 tsp carob powder
1 tsp pumpkin powder
1 tsp tapioca
sprinkle of cinnamon …
