Bonus: a surprisingly simple quinoa tortilla!

I’ve never made enchiladas for myself, but have enjoyed them in restaurants on many occasions. Of course the dogs get to have it homemade first. To do this delicious dish justice, I watched a bunch of tutorials (the human version) to help guide our doggy friendly one!
