Crème brûlée is one of the world’s most famous desserts, commonly found on the menu in fine dining restaurants, and bound to impress!
Though it seems like a fancy dish, it’s actually really simple to make (except for the part of trying not to spill it getting it into the oven).
Even simpler is the ingredients list which, for our doggy version, is comprised of just egg yolks, milk, and cheese. Plus some berries for garnish. If you don’t like sweets, you may prefer this recipe for pups over the traditional one. Luckily the yield is two Crème Barklées, so you can share with your dog (if they allow it).
Makes two Crème Barklées (using 4 oz ramekins)
Ingredients
2 egg yolks
1 cup goat milk
¼ cup finely grated parmesan
mixed berries for garnish
Directions
Preheat the oven to 325°F.
Have the egg yolks ready in a heat proof bowl. Prepare a whisk.
In a saucepan, bring the goat milk to a simmer, then remove it from the heat immediately. Let it rest for 30 seconds.
Pour just a splash of the still hot goat milk into the egg yolks and whisk quickly, tempering the egg yolks (warming them up first so they don’t turn into scrambled eggs).
Add the rest of the goat milk into the egg yolks while continuing to whisk.
Pour the mixture through a strainer into a separate bowl or pitcher, removing any curds that may have formed.
Pour the strained mixture into your two ramekins. Carefully place the ramekins into a larger baking dish (with sides at least as tall as the ramekins).
Bring a kettle of water to a boil. Let it rest for a minute.
Carefully place the baking dish with the filled ramekins into the oven.
Even more carefully, fill the baking dish with the hot water from your kettle, until it reaches halfway up the ramekins. This is the water bath that will help the Crème Barklées cook evenly.
Bake for 30-40 minutes, until the Crème Barklées are just set. They should still have a slight jiggle but not look too runny in the middle.
Carefully remove the dish from the oven and then remove the ramekins from the water bath. Allow them to cool for 30 minutes at room temp, then refrigerate them for another 3-4 hours or until chilled.
Before serving, cover the top of the custard with a layer of grated parmesan and use a food safe torch to crisp the cheese up until it’s golden brown.
Top with your dog’s favorite berries. Let the crust cool before serving!
Serve in moderation as a treat.
